  • 0.8 cup whole wheat semolina flour (whole grain)
  • 0.9 cup type 2 flour
  • 3 tbsp sugar
  • 1 egg
  • 4 tbsp extra virgin olive oil

  • 1 tsp baking powder

Steps

  • In a bowl, beat the egg with the sugar until you obtain a homogeneous mixture.

    Add the EVO oil and mix well.

    Add the flours with the baking powder, the vanillin, cinnamon, and salt.

    You can use just one type of flour (type 2 or type 1 or zero).

    Incorporate the pine nuts (you can toast them slightly before for more aroma).

    Work the dough with a fork, then use your hands, until you obtain a soft consistency but not sticky.
