- 14 oz canned peas
- 2 cups type 2 flour
- 1 pinch fine salt
- 1 pinch pepper

Steps
Preparing this gnocchi dish will be simple and quick.
Take canned peas, rinse them and drain them well from their water of preservation and put them in a blender or immersion blender, add a pinch of salt and a pinch of pepper (which you can omit), and blend.
When the peas have turned into puree, move them to a work surface or a bowl and gradually incorporate the flour.
The dough for the pea gnocchi will take shape in its elasticity and compactness.

Dust the dough with flour and at this point, you just need to prepare the water to cook them.
The shaping will be very quick, because as you’ve seen from the image, I didn’t recreate the traditional gnocchi (you can if you want) but simply cut the gnocchi with kitchen scissors.
Easily, take the dough in your hands and with scissors cut small pieces (which will form our rustic gnocchi) that you will drop directly into the hot water, or cut them and then put them in the pot, be careful of splashes when you drop them in.
The gnocchi will cook in just a few minutes, when you see them rise to the surface they are cooked. Really 2/3 minutes no more. Anyway, taste them before draining them all.
I wanted to dress them with a great fresh tomato sauce, extra virgin olive oil, garlic, leek, and basil.
We found them exquisite in their simplicity.
Tips on how to store pea gnocchi
Place the pea gnocchi on a floured tray, well spaced.
Cover them with plastic wrap or a clean cloth.
Duration: 24 hours maximum.
(Since they contain pureed peas, they tend to release moisture and soften.)
Cooked pea gnocchi
In the refrigerator:
In an airtight container, preferably dressed with a drizzle of oil to prevent sticking.
👉 They keep for 1–2 days
As you’ve seen and read, I dressed the gnocchi with a fresh tomato sauce.
Given the lightness of the ingredients they are prepared with, if you want to accompany them with a good ragù or a cheese cream, like ricotta and gorgonzola, they will be equally perfect.
