Ingredients

  • 1 egg
  • 1/4 cup vegetable oil
  • 1/5 cup sugar
  • 1 teaspoon liqueur
  • 5/8 cup buckwheat flour
  • 1 cup cup hazelnut flour
  • 1 pinch salt
  • 1/2 teaspoon baking powder

  • 1 Food processor
  • 1 Fork
  • 1 Baking sheet

Steps

  • In a bowl, crack an egg at room temperature.

    Add the sugar, the oil, a pinch of salt, and the teaspoon of liqueur, then start mixing with a fork.

    In a food processor, grind 90 g of whole hazelnuts.

    If you prefer, you can buy ready-made hazelnut flour.

    Incorporate the dry ingredients into the liquids already in the initial bowl.

    Mix well until it is no longer possible to stir the ingredients with the fork and then knead the dough by hand.

  • Once the dough ball is ready, it should be compact but soft.

    Shape the cookies into your preferred shapes.

    I didn’t use cookie cutters but rolled them between my hands to form a ball, which I then flattened once placed on the baking sheet.

    I made round cookies or elongated ones, which I finished on the surface with knife cuts.

    Place the hazelnut cookies on the baking sheet covered with parchment paper and bake at 356°F, preheated convection oven for about 10/11 minutes.

These quantities will yield about 18 cookies.

You can store them in a tin box or a glass cookie jar with an airtight lid.
