Apple and Buckwheat Cake

The apple and buckwheat cake comes from the combination of a few simple ingredients, like eggs, apples, water, oil, and mixed flours.

Ingredients

  • 2 eggs
  • 2.1 oz brown sugar (you can also use white granulated sugar)
  • 1/3 cup vegetable oil
  • 1 pinch salt
  • 7 oz water
  • 1 packet vanillin
  • 1 3/4 cups buckwheat flour
  • 7/16 cup potato starch
  • 7/8 cup Kamut® flour
  • 1 packet baking powder
  • 1 apple

Tools

  • 1 Mixing bowl
  • Electric beaters
  • 1 Spatula
  • 1 Cake mold
  • 1 Knife

Steps

  • In a bowl, pour the room temperature eggs and sugar.

    Start whisking until fluffy with the beaters, also add the pinch of salt.

    Add the packet of vanillin.

    Pour in the oil slowly and the water, continuing to mix with the beaters.

    Once the liquids are done, start adding the sifted powders, the flours, the starch, and the baking powder.

    Be careful not to use the beaters at too high a speed, otherwise, the flour will spread everywhere.😉

    Also, add the diced apple and continue to mix from bottom to top with the spatula.

  • When the batter is ready, take a 9″ cake pan and butter and flour it.

    This time I used a bundt pan, but a regular cake pan works fine too.

    Pour the mixture into the pan.

    Now bake at 350 degrees Fahrenheit fan oven, for about 40 minutes.

    Always do the toothpick test before removing from the oven.

    If needed, leave it in the oven a few more minutes. Always adjust based on your appliance’s power.
