Shortbread Cookies with Jam

The shortbread cookies with jam are simple and delicious, reminiscent of those made with butter, even though there isn’t any in this version.

Instead of sugar, I used honey.

You can enjoy them for any of your morning or afternoon breaks.

You choose the flavor of the jam, I love making them with peach or apricot.

Ingredients

Let’s see what we need to make this recipe

  • 2 eggs
  • 1.35 oz honey
  • 1 lemon zest (grated)
  • 1 pinch salt
  • 2.82 oz vegetable oil
  • 1 tsp baking powder
  • 2.01 cups flour
  • jam (peach, apricot, or your favorite)

Steps

  • In a bowl, let’s begin to mix the sugar with the zest of the citrus fruit you prefer.

    You can do this by hand.

    Then add the eggs, the pinch of salt, and the oil.

    Mix the ingredients well with a fork, then add the baking powder and sifted flour.

    If it becomes difficult to mix with a fork, abandon it and continue with your hands.

    You will get a compact and smooth dough.

    If you have time, place the dough in the fridge for half an hour, wrapping it in plastic wrap or covering the container where you mixed it.

  • Take the dough and break off pieces thinking about the size you want for the cookie.

    I usually keep the scale nearby and weigh each piece to have more or less uniform cookies.

    The weight I prefer is 0.78 oz per cookie.

    As you can see from the photo, I simply rolled the dough between my hands to create balls.

    I made an indentation in the center of the cookie with my finger, which I then filled with my favorite jam.

    I placed the cookies on a baking sheet covered with a silicone mat.

    You can also use parchment paper.

    I preheated the oven and baked at 347°F (ventilated) for about 20 minutes.

How to Store Shortbread Cookies with Jam

The cookies keep for a few days in a glass cookie jar or a tin box.

With these quantities, you will get about 20 cookies.

The number of pieces will depend on the size and weight.
