The soft mandarin cake will amaze you with its fragrance and soft texture even without using too many ingredients and a lot of sugar.
As soon as citrus season arrives, cakes, cookies, and even savory dishes containing at least one of these fruits, cannot be missing from my preparations.
This cake is light but does not lack taste and soft texture.

Ingredients
- 2 eggs
- 2 tbsp sugar
- A few drops vanilla essence
- 1 lemon zest (grated)
- 70 mandarin juice
- 1 1/4 cups type 2 flour (other flour types are also fine)
- 1 1/2 tsp baking powder
- 3 1/2 tbsp extra virgin olive oil (or seed oil)
- 1/4 tsp salt (a pinch)

Steps
Prepare the juice with the mandarins and set aside.
In a mixing bowl, add the eggs, grated lemon zest, and sugar.
Begin to mix with a fork.
Add the mandarin juice and pulp from the juicer, making sure to remove any seeds.
A few drops of vanilla essence and then the extra virgin olive oil, or if you prefer, seed oil is also fine.
Now incorporate the dry ingredients.
Flour, baking powder, and a pinch of salt, and continue mixing.
You will get a smooth and creamy batter which you will pour into a cake mold.
I used a bundt-shaped silicone mold measuring 8 inches.
If you use a regular cake pan or rectangular mold, they will work as well, but check the baking time based on the pan size.
I should mention that my cake was small, but it rose in height, taking about 35 minutes to bake.
If you use a 9.5-inch mold, the cake will surely be lower, so the baking time might be shorter.
Always test with a toothpick to check doneness.
Before baking, preheat the oven to 356 degrees Fahrenheit, static mode.
Once it reaches temperature, bake following the times illustrated in the previous step.
Bake for 25 to 35 minutes, depending on the pan used.
Preserving the Soft Mandarin Cake
The soft mandarin cake will be perfect to enjoy a few minutes after removing from the oven.
Let it cool and enjoy.
If there’s any leftover, you can store it under a glass stand or covered container for two to three days.
