The soft mandarin cake will amaze you with its fragrance and soft texture that it will offer you, even without using too many ingredients and a lot of sugar.
As soon as citrus season arrives, cakes, cookies, but also savory dishes containing at least one of these fruits, cannot be missing from my preparations.
This cake is light but does not lack in taste and soft texture.

Ingredients
- 2 eggs
- 2 tbsp sugar
- A few drops vanilla essence
- 1 lemon zest (grated)
- 1/4 cup mandarin juice
- 1 1/4 cup whole wheat flour (other flours are also fine)
- 1 tsp baking powder
- 1/4 cup extra virgin olive oil (or seed oil)
- 1/4 tsp salt (a pinch)

Steps
With the mandarins, prepare the juice and set aside.
In a bowl, pour the eggs, the grated lemon zest and sugar.
With a fork, start mixing.
Add the mandarin juice and pulp that you will recover from the juicer, being careful of any seeds.
A few drops of vanilla essence and then the extra virgin olive oil, or if you prefer, seed oil will work just as well.
Now incorporate the dry ingredients.
Flour, baking powder, and a pinch of salt, and continue mixing.
You will get a smooth and creamy batter that will be poured into a cake mold.
I used a bundt-shaped mold made of silicone, measuring about 8 inches.
If you use a round or rectangular mold, that works too but check the baking time based on the size of the container.
I mean, my cake was small but it rose in height, taking about 35 minutes to cook.
If you use a 9-inch mold, the cake will definitely be lower and therefore the times could also be reduced.
Just always do the toothpick test.
Before baking, preheat the oven to 350 degrees in static mode.
Once it’s at temperature, bake according to the times I illustrated in the previous step.
From 25 to 35 minutes depending on the mold used.
Storage of Soft Mandarin Cake
The soft mandarin cake will be perfect to enjoy a few minutes after you’ve taken it out of the oven.
Let it cool and eat.
If there are leftovers, you can store it under a glass cake stand or covered container for two or three days.
