Cookies with Prunes

The cookies with prunes are crispy sweets with a soft dried fruit center.

Very easy and quick to make.

You won’t need any cookie cutters, just use your hands.

They are low in sugar, but if you prefer more sweetness, simply increase the amount of sugar.

Ingredients

Let’s see what we need to make this recipe

  • 2 eggs
  • 1/4 cup sugar (if you prefer sweeter, you can increase up to 1/3 cup)
  • 1 pinch salt
  • 6 tbsp vegetable oil
  • as needed orange zest (grated or lemon if preferred)
  • 2 1/4 cups flour
  • 1 tsp baking powder
  • as needed dried prunes (half a prune per cookie)

  • 1 Baking Sheet
  • 1 Fork
  • 1 Teaspoon
  • 1 Knife

Steps

  • In a bowl, start mixing the sugar with the citrus zest of your choice.

    Then add the eggs, the pinch of salt, and the oil.

    Mix the ingredients well with a fork and then add the sifted baking powder and flour. 

    If it becomes difficult to mix with the fork, leave it and continue with your hands until you get a smooth and compact dough ball.

  • Take the dough and break off pieces thinking about the size you want for the cookie. 

    I usually keep the scale nearby and weigh each piece.

    This way, I’ll have more or less equal cookies.

    Once I’ve cut the piece of dough, I’ve slightly widened it and placed half a dried prune in the center.

    Then I closed the edges and rolled the ball between my hands.

    I placed the cookies on a baking sheet lined with a silicone mat or parchment paper.

    Once the oven was heated, I baked at 338°F (170°C) fan-assisted, for about 15 minutes.

    Ready to taste? All that’s left is to wish you bon appétit

How to store cookies with prunes

Shortbread cookies will keep well for two or three days under a glass dome, in a jar, or an airtight metal tin.

Perfect to enjoy for breakfast, a snack, or a quick break.
