Who doesn’t like pancakes? Surely, there is someone who doesn’t love them.
I find them fantastic in every version.
Today I propose this super easy recipe to make and also to remember.

You just need to use the same ingredients but lactose-free.

Ingredients
Let’s see what we need to make this recipe
- 3.5 oz ricotta (lactose-free is also fine)
- 3.5 oz plain natural yogurt (lactose-free is also fine)
- 3.5 oz milk (lactose-free is also fine)
- 3.5 oz flour
- 2 tsps baking powder
- to taste lemon zest (orange or almond essence also work if you prefer)
- 2 tsps sugar
- to taste honey (for garnish on top)
- to taste millet (or puffed spelt, optional for garnish)

- 1 Spoon
- 1 Lemon zester
Steps
In a bowl, pour the milk, yogurt, ricotta, the two teaspoons of sugar, and the zest of one grated lemon.
Alternatively, use other essences you love more instead of lemon zest.
With a fork or a hand whisk, begin to mix these ingredients together.
Add the sifted flour and baking powder.
Continue to stir.
You will obtain a nice frothy mixture.
Once you get a homogeneous, smooth, and lump-free batter, our mixture is ready to go into the pan.
Pour a small amount of oil into the pan, heat it well, and with a silicone brush, spread it to grease it evenly.
Pour a heaping spoonful of batter for each pancake you will prepare.
They will be slightly smaller but super fluffy and delicious.
They will need to cook two minutes per side, when you see the usual bubbles it means they are ready to be flipped over.
If you prefer sweeter pancakes, you can sprinkle with plenty of powdered sugar or add a few more grams of sugar to the batter.
Once ready, you can enjoy them by garnishing as I did with honey and a few teaspoons of puffed cereals.
This time I used millet, do it to your liking.
They will also be perfect with decorations of fresh fruit, jam, spreadable creams, maple syrup, in short, see what your imagination suggests.

Advice
If you have any leftover pancakes, you can safely store them in the refrigerator for 1-2 days and reheat them before consuming them again.
If you want, you can prepare the batter the night before and put it in the fridge.
In the morning, you just have to heat the pan and cook the fluffy ricotta pancakes.
