Rice Cookies with Orange

I orange rice cookies were made with a few ingredients; they are suitable for everyone, especially for those who are intolerant.

These very simple cookies are crumbly and fragrant, winning over my family and my nieces and nephews.

In my opinion, when a child tells you that your creation is good, especially if it’s a simple recipe, you’ve hit the jackpot.

Ingredients

Let’s see what we need to make the recipe

  • 1 egg
  • 3.5 tbsp orange juice (+ grated zest)
  • 3.5 tbsp sugar (add more for extra sweetness)
  • 3.5 tbsp vegetable oil
  • 1.75 cups rice flour
  • 1 pinch fine salt
  • 1 tsp baking powder

  • 1 Citrus juicer
  • 1 Cookie cutter
  • 1 Sieve

Steps

  • In a bowl, crack the egg, add the sugar and a pinch of salt.

    Start mixing with a fork.

    Squeeze the orange to get the required amount of liquid.

    Use a sieve to filter the juice, so no seeds fall into the dough.

    Add the juice and grated zest to the bowl and continue mixing.

    Combine the oil and gradually incorporate the flour and baking powder.

    Mix with the fork as long as possible, then continue by hand.

    Once a smooth and fragrant dough ball is obtained, place it on a work surface and use a rolling pin to roll out a not-too-thin sheet.

  • I cut the cookies with a round cutter.

    With the tip of a piping bag, I decided to create the decoration you see.

    Everyone is free to cut the cookies into the shapes they prefer.

    Once ready, place the cookies on a baking tray lined with parchment paper or a silicone mat.

    Depending on size and thickness, you will get about 20 cookies.

    Turn on the oven at 338°F and once it reaches temperature, bake for about 18-20 minutes.
