Gnocchi with asparagus and speck is a super delicious first course that I am sure will win over all your diners.

I prepared a simple asparagus cream to which I added the savoriness of speck.

The crunchy texture of the cured meat, combined with the softness of the gnocchi and the creaminess of this vegetable, created an irresistible combination.

Ingredients

Let’s see what we need to make the recipe

  • 1 bunch asparagus
  • 3.5 oz speck
  • to taste extra virgin olive oil
  • to taste fine salt
  • 7 oz potato gnocchi
  • 1 clove garlic

  • 1 Knife
  • 1 Blender

Steps

  • First, I cleaned the asparagus, cut it, and cooked it in a pan with garlic, salt, and oil.

    I sliced them into rounds, leaving the tips whole.

    Separately, I put on the water with salt to cook the gnocchi.

    Once the asparagus was cooked, I transferred it to the blender jug (setting aside some tips) that I will use for plating.

    In the blender, I also added a little oil and a tablespoon of the gnocchi cooking water.

    I blended until I obtained a nice cream.

  • I then took the speck and in a separate pan, I toasted it until it became crispy.

    Once the gnocchi were cooked, I transferred them to the pan with the asparagus cream and mixed well.

  • Let’s prepare the plate where we will place the gnocchi mixed with the asparagus cream and garnish on top with crispy speck and tips.

    If you like, you can lightly sprinkle with pepper and then… enjoy this delight.
