Cookies with Orange Juice

I prepared the cookies with orange juice using a simple shortcrust with oil and juice from my little orange tree.

These cookies are perfect for both young and old and can be enjoyed whenever you feel a craving, without overindulging in fats and sugars.

Ingredients

  • 2 eggs
  • 1 pinch fine salt
  • 70 g potato starch
  • 340 g type 1 flour
  • 60 g sugar (if you prefer more sweetness you can use up to 80g)
  • 70 g orange (juiced)
  • orange zest (grated)
  • 2 teaspoons baking powder
  • 70 g seed oil

Tools

  • 1 Baking tray
  • 1 Juicer
  • 1 Mixing bowl
  • 1 Fork

Steps

  • In a bowl, break the eggs, add the sugar and the grated orange zest.

    Using a fork, start to mix these ingredients.

    Add the oil, the juice from the squeezed orange, and the pinch of salt.

    Mix again and add the sifted powders, flour, potato starch, and baking powder.

    When you can no longer knead with the fork, use your hands until you create a soft, smooth dough ball.

  • At this point, let’s form the cookies by making balls that we will roll between our hands.

    For even baking, I prefer to weigh each ball so they are more or less all the same size.

    Each cookie weighs 30 grams.

    Once ready, I placed them on a baking tray lined with parchment paper and baked them in a preheated oven at 350°F, for about 17/18 minutes.

    Adjust according to your oven’s power.

How to Store Orange Cookies

They can be stored at room temperature in an airtight glass or tin cookie jar.
