The fennel velouté is a light dish, suitable for those who want to eat consciously while enjoying the beneficial properties that this vegetable offers us.
The fennel cream is easy to prepare, it’s tasty, and you can enrich it with whatever you like.
I also added mixed seeds, whole grain spelt, and homemade croutons.

Ingredients
Let’s see the ingredients we need to prepare the velouté
- 1.1 lbs fennel (already cleaned)
- 15 oz potatoes
- 3.5 oz onions
- 4 cups water
- 2 tsp fine salt (approximately)
- 1.5 tbsps extra virgin olive oil
- 3 stalks celery
- 1 clove garlic
- 5 slices bread (cubed for croutons)
- to taste mixed seeds
- to taste extra virgin olive oil
- to taste spelt (whole grain puffed)
- to taste grated parmesan (or pecorino)

Steps
First, wash the vegetables.
Slice the onions and slightly wilt them in a saucepan with the oil.
Cut the fennel, potatoes, and garlic into pieces, and add them to the pot with the onions.
Add water to cover them then add the salt and another tablespoon of oil.
Turn on the stove and let it cook for about 50/60 minutes. When the vegetables are soft, our preparation will be ready.
Using the immersion blender, create a nice, smooth and homogeneous cream.
When we plate it, add as much as you like to garnish the fennel cream.
I’ll tell you how I enriched my velouté.
I prepared croutons by cutting turmeric bread into cubes, then toasting them in a hot pan with a drizzle of oil, until crispy.
Once ready, I added them on the velouté along with some mixed seeds, whole grain spelt flakes, a drizzle of EVO oil, and a sprinkle of parmesan or pecorino.
