EVO Oil and Lemon Cookies

The EVO oil and lemon cookies are delicious shortbread cookies that pair wonderfully with snacks and breakfasts.

Ingredients

  • 1 1/4 cups Kamut® flour
  • 1 cup rice flour
  • 1 egg
  • 1 pinch fine salt
  • 3 1/2 tbsp extra virgin olive oil
  • 3 1/2 tbsp lemon juice (+ grated zest)
  • 2 tsp baking powder

Tools

  • 1 Bowl
  • 1 Baking tray
  • 1 Rolling pin
  • 1 Juicer
  • 1 Fork
  • 1 Cookie cutter
  • 1 Sieve
  • 1 Pastry board

Steps

  • Break the egg into a bowl, add the sugar and a pinch of salt. Start mixing with a fork.

    Squeeze a lemon to get the required amount of juice and strain it using a sieve to remove any seeds that might fall into the mix.

    Add the juice and grated zest and continue to mix.

    Add the oil and gradually incorporate the flour.

    Mix with the fork as long as possible, then continue by hand.

    Once you have a nice smooth and scented dough, place it on a pastry board and roll it out with a rolling pin to create a not-too-thin sheet.

  • To shape the cookies, I took pieces of dough and rolled them into logs on the pastry board.

    Using a knife or a dough cutter, I cut the dough log into pieces and then manually scored them with a knife, creating the decoration you see.

    Everyone is free to cut the cookies into whatever shapes they prefer.

    Once the cookies are ready, place them on a baking tray lined with parchment paper or a silicone mat. Depending on the size, you will get about 20 cookies.

    Preheat the oven to 340°F and as soon as it’s at temperature, bake for about 17 minutes.

    Remove from the oven and enjoy the aroma and crispness of these simple yet delicious treats.

I store the EVO oil and lemon cookies in an airtight glass cookie jar or a tin box.
