Matcha Tea and Yogurt Cake

The matcha tea and yogurt cake is a sweet preparation with a soft texture and a particular color that can vary from dark green to light.

Ingredients

  • 2 eggs
  • 1/4 cup sugar
  • 1/2 cup water
  • 4 tbsps matcha green tea
  • 2/3 cup plain yogurt
  • 1 pinch fine salt
  • 1/3 cup vegetable oil
  • 1 packet baking powder
  • 2 cups all-purpose flour
  • 1 lemon (juice and grated zest)
  • to taste powdered sugar (optional)

Steps

  • First, dissolve the tea powder in the hot water.

    In a bowl, pour the cracked eggs and add the sugar.

    Beat these ingredients until they become light and frothy.

    Add the prepared green tea and the plain yogurt.

    Also pour in the oil and mix with the whisk at low speed.

    Add the sifted flour, baking powder, and a pinch of salt.

    Finally, add the grated zest and the squeezed juice of one lemon.

    Using a spatula, gently combine everything from bottom to top to obtain a smooth and lump-free batter.

  • Butter and flour a pan. Mine measures 9 inches.

    Pour in the batter and level it.

    Bake the cake in a preheated static oven at 356 degrees Fahrenheit for about 35/40 minutes.

    Always adjust according to your oven’s power and before turning it off, do the toothpick test.

    If you like, decorate the surface of the cake with powdered sugar.
