The turkey thigh with cabbage and mushrooms is a main course I prepared for a Sunday lunch, and it delighted the whole family.

Let’s see the ingredients we need for the recipe
- 1.5 lbs turkey thighs, raw
- 3 shallots
- 2 cloves garlic
- 10.5 oz champignon mushrooms (fresh or frozen)
- 0.5 cup white wine
- to taste extra virgin olive oil
- 2.5 cups water
- to taste sage
- to taste fine salt
- 2 carrots
- to taste pepper (optional, if desired)
- 7 oz Savoy cabbage

Steps
First, prepare the vegetables.
Wash and cut the cabbage into strips and set aside.
In a frying pan, cook the champignon mushrooms for a few minutes, until they release their water.
Once the water has been released, set them aside.
In the same pan (which you will have emptied of the mushrooms), chop the shallot, garlic, carrot, sage, and add a drizzle of extra virgin olive oil. Let them wilt for a moment.
Then add the turkey thigh, sprinkle both sides with salt, and seal the meat.
When the thigh is golden, deglaze with white wine.
As soon as the wine evaporates, add the mushrooms and cabbage.
Now pour the water over, and after a few minutes, transfer everything to the oven.
I used a pan that can also be placed in the oven; otherwise, I would have transferred everything to a suitable pot.
I cooked in fan mode, 320°F, slow cooking for about two hours, although it depends on the thickness and weight of the meat.
If during cooking you see that the broth, the water is drying up too much, add half a glass of hot water.
Before turning everything off, make sure the meat is cooked.
