Gnocchi with bell pepper cream is a very easy first course to make and super delicious to devour.

The goodness of the gnocchi that melts in your mouth, the sweetness of the bell pepper reduced to cream with potatoes and milk, has embraced the tangy taste of feta in a perfect marriage.

Ingredients

Let’s see the ingredients we need to make this recipe

  • 20 oz bell peppers
  • 8.5 oz potatoes
  • to taste fine salt
  • to taste oregano
  • 3 tsps milk
  • 2 oz feta

Tools

  • 1 Saucepan
  • 1 Baking Tray
  • Parchment Paper

Steps

  • Wash the bell peppers and put them to bake in the oven after placing them on a baking tray lined with parchment paper or a silicone mat.

    I baked the bell peppers in the oven for about 40 minutes, adjust it with yours, then once cooked, peel them and set them aside.

    In a saucepan, I boiled the potatoes, once soft, I peeled them and put them in the mixer or a kitchen processor.

    I added the bell peppers, the three teaspoons of milk, oregano, salt, and blended everything to become a smooth, delicious cream, which I also thinned with a spoon of gnocchi cooking water.

    Once the gnocchi are ready, toss them in the bell pepper cream.

    I left some cream aside to add later to each plate.

    Now cut the feta and add about 1 oz per plate. Then you decide if you prefer more or less.
