The sweet apple focaccia is a simple preparation, perfect for those who want a low-sugar treat.

A leavened dough that we will decorate with apples and, if you like, some chocolate chips.

I will explain everything in the following steps, but this sweet focaccia is nothing more than an unleavened bread dough with added fruit on top.

I assure you that the result will be delicious and a bit different from the usual snacks to offer to kids, and a light break for us adults.

Ingredients

Let’s see the ingredients we need to make the recipe

  • 14 oz water (lukewarm)
  • 5 cups flour
  • 3 teaspoons sugar
  • 2 apples
  • 3 tablespoons extra virgin olive oil
  • 0.18 oz fresh yeast
  • 0.14 oz fine salt (to dissolve in 1 oz of water)
  • 1 teaspoon sugar (to sprinkle on top)
  • as needed cinnamon powder (to sprinkle on top)
  • Half lemon (juiced)

Steps

  • I want to tell you right away that with this dough and these measurements, you will get two tall sweet focaccias like mine, using a 10-inch mold each.

    If you use a larger pan, like 14 inches, you will obviously get one single tall focaccia. Do as you please.

    Let’s start by pouring the lukewarm water into a container and dissolve the yeast and the 3 teaspoons of sugar inside.

    In the stand mixer, pour the flour and after making it take a few turns with the hook, add the water in the center, in which we had dissolved yeast and sugar.

    Let it run for two minutes and also add the oil and then the water, where we had previously dissolved the salt.

    THE SALT SHOULD ALWAYS BE ADDED LAST, so it won’t interfere with the yeast and sugar that are already starting to work together.

    This dough will remain very hydrated. Especially if you work it by hand, do not worry if once ready, it still tends to stick a bit to your fingers.

    Dust your hands with some flour and (if you have not used the mixer bowl or a container) and have worked the dough on the wooden worktop, transfer it to a bowl to let it rest for at least 3 hours, covering the container with plastic wrap or a damp cloth.

  • After the resting time, oil your hands and take it out of the container to transfer it to the baking pan, which you have previously oiled a little, at the base.

    Once the dough is spread, pressing your fingers inside to recreate the classic focaccia holes, let the focaccia rise again for another hour.

    After the second rising, take the focaccia and sprinkle the surface with a bit of oil.

    Slice the apples and let them soak for a few minutes in the juice of half a lemon.

    Now take the apple and place it on the focaccia, add the teaspoon of sugar, a bit of cinnamon, and some chocolate chips, if desired.

    As you can see, I used just one teaspoon of sugar, but if you prefer to sweeten it more, you can add more.

    The focaccia is ready to be baked

    Preheat the oven to static mode at 356°F, once hot, bake for about 20/25 minutes.

    Before turning off the oven, prick the focaccia with a skewer to check that the inside is perfectly cooked.

Storing the Sweet Focaccia

The sweet apple focaccia can be stored in the fridge. When ready to use, just heat it for a few minutes in the oven, microwave, or skillet.
