Ingredients
Let’s see the ingredients we need to make the recipe
- 2/3 cup milk
- 3 teaspoons instant coffee
- 2 3/4 cups type 2 flour (or other types, all-purpose, double zero, type 1)
- 1/3 cup rice flour
- 1 teaspoon unsweetened cocoa powder
- 1/3 cup vegetable oil
- 1/3 cup sugar
- 1 1/2 teaspoons baking powder

Steps
LET’S PREPARE THE DOUGH
In a measuring cup, add the milk at room temperature, the instant coffee, and the sugar, and use a teaspoon to mix them well together.
Then add the oil and the unsweetened cocoa and mix again.
Transfer these liquids to a bowl and start incorporating the dry ingredients, mixing with a fork.
When it’s no longer possible to mix with a fork, knead by hand.
As you read in the ingredients, I used type 2 flour. If you use a different type, such as all-purpose, double zero, etc., remember that absorption may vary.
You might need a little more or less than my amount, the important thing is to add the flours little by little to get a sense of the consistency.
We should get a soft and easily workable dough.
When the dough is ready, keep the scale handy to weigh the balls we will make.
From the dough, take pieces that should all weigh the same (approximately). My coffee cookies weighed 25/26 grams each.
With a similar weight for all cookies, baking will be more uniform. You can make them the size you prefer, even smaller; you will get more.
To give the shape you see, I made a ball, elongated it a bit to resemble a coffee bean shape, and then made a slit on top with a knife.
After making the cookies, place them on a baking sheet covered with compostable parchment paper or a silicone mat.
Preheat the oven to 340 degrees Fahrenheit with convection mode and once at temperature, bake the cookies for about 20 minutes.
If you make them smaller and therefore lighter, they will need to bake a few minutes less.
Remove from oven and enjoy your delicious breakfasts, snacks, and treats.

Store the cookies in an airtight glass or tin cookie jar for 2/3 days.
