Ingredients
Let’s see the ingredients we need to make the yogurt shortcrust pastry
- 1 egg
- 2.1 oz sugar
- 1 tsp vanilla extract
- 4.4 oz plain yogurt (or vanilla)
- 2.1 oz potato starch
- 1 pinch fine salt
- 1.9 oz extra virgin olive oil (or seed oil)
- 1 tsp rum (or similar liqueur)
- 0.3 oz baking powder
- 9.2 oz all-purpose flour

Steps
In a mixing bowl, break the egg, add the pinch of salt and sugar and start mixing with a fork.
Add the oil, plain yogurt, the teaspoon of vanilla extract, the teaspoon of liqueur and continue mixing.
Once the liquids are mixed start incorporating the dry ingredients. Sift the flour, starch, and baking powder, adding them gradually until you create a dough ball that will be fantastic, soft, and smooth.
Once the dough ball is prepared, flour the work surface and roll out the dough with a rolling pin.
At this point, the dough is ready to make tarts, cookies, pastries.
The cooking time depends on how you use it. Keep in mind that if you make a tart and fill it with soft creams (like ricotta) the dough will remain a bit more moist and take a bit longer than a tart filled with jam.
The general baking time is around 25/30 minutes in a static oven at 340°F, which may increase or decrease depending on the use.
For example, if you make cookies, bake for about 12/13 minutes, just be sure to check before turning off the oven.

Yogurt shortcrust pastry can be stored like butter or oil shortcrust cookies, in airtight glass, tin jars, or under glass domes if in cake form.
