Lactose-Free Yogurt Bundt Cake

Ingredients

Let’s see the ingredients we need to make the lactose-free yogurt bundt cake

  • 2 eggs
  • 0.7 oz sugar (you can increase the sugar up to 1.8 oz for a sweeter cake)
  • 0.5 cups lactose-free yogurt (I chose coconut flavor)
  • 3 tbsp extra virgin olive oil (or corn or sunflower seed oil)
  • 1 tsp vanilla extract
  • 0.4 cup potato starch
  • 1.25 cups spelt flour (or other type of flour like all-purpose, type 1)
  • 1.5 tsp baking powder
  • 0.9 oz dark chocolate chips
  • 1 pinch fine salt

  • 1 Mixing bowl
  • 1 Bundt cake pan
  • 1 Spatula

Steps

  • In a mixing bowl, break the eggs, which should have been previously left at room temperature, add a pinch of salt, the sugar, and start mixing with a fork.

    Then add the yogurt, the oil, vanilla extract, and chocolate chips.

    Once these ingredients are combined, we move to the dry ingredients.

    Sift together the flour, baking powder, and potato starch, and gradually incorporate them into the mixture.

    Once you have a nice soft mixture and well-combined, pour it into the cake pan. If you are using a silicone pan like mine, you might not need to grease and flour it, as cakes release easily from this material.

    For a VERY tall bundt cake, I used an 18 cm (7-inch) pan, and at these dimensions, the cake should be baked at 340°F for about 35 minutes.

    If using a 20/22 cm (8/9-inch) pan, the cake will be slightly shorter but equally delicious and will need to bake for less time, still at 340°F but for about 20/25 minutes.

    In both cases, always do the toothpick test before removing from the oven.

This yogurt bundt cake can be stored for a few days under a glass dome or in a plastic food bag.
