Ingredients
Let’s see the ingredients we need to make the plumcake
- 1 cup heavy cream
- 2.5 oz candied peel (orange)
- 2.5 oz sugar (you can use up to 3.5 oz for a sweeter taste)
- 1 packet vanillin
- 1 packet baking powder
- 1 pinch fine salt
- 0.7 oz liqueur (your choice, like rum)
- 8.8 oz flour
- 3 eggs
- 0.7 oz pine nuts

Steps
In a bowl, crack the eggs, add the sugar and a pinch of salt. Use the electric whisk to beat the eggs until they are nice and frothy.
Then add the vanillin and the packet of sifted baking powder. Give the batter another mix.
Now add the liquid cream, your chosen liqueur, and gradually the flour.
When the batter is well blended and frothy, fold in 1.4 oz of candied orange, the rest will be used to sprinkle on top along with pine nuts (if you like them)
Once the batter is ready, butter and flour a loaf pan, pour the batter into it, and top with the remaining orange zest and pine nuts.
Preheat the oven to 340°F and once it reaches temperature, bake for about 42/43 minutes. Test with a toothpick before turning off the oven.
