Ingredients
Let’s see the ingredients we need
- 3 oz onion
- 1.5 oz sun-dried tomatoes
- 1.4 oz extra virgin olive oil (about 2 tablespoons)
- 1 leaf bay leaf
- 10.5 oz eggplant (long variety)
- 8.8 oz tomato pulp
- 1 tsp fine salt (to taste)
- 1 pinch sugar
- 0.7 oz pecorino (grated)

Steps
Take a saucepan and put inside the finely chopped onion, chopped sun-dried tomatoes, a drizzle of extra virgin olive oil, a bay leaf, and the eggplant cut into cubes.
Sauté these ingredients together and when golden, add the tomato pulp or passata, fine salt, a pinch of sugar, and then start cooking.
The sauce should cook gently for about 45 minutes.
When the sauce is almost ready, I cooked the gnocchi, drained, and plated them. Choose the pasta shape you like best.
Don’t forget a nice grating of pecorino to finish the dish.
