Eggplant Sauce

The eggplant sauce is a dish you must try, especially if you love this vegetable.

To prepare the recipe, I also used sun-dried tomatoes that gave the dish an extra kick.

Ingredients

Let’s see the ingredients we need

  • 3 oz onion
  • 1.5 oz sun-dried tomatoes
  • 1.4 oz extra virgin olive oil (about 2 tablespoons)
  • 1 leaf bay leaf
  • 10.5 oz eggplant (long variety)
  • 8.8 oz tomato pulp
  • 1 tsp fine salt (to taste)
  • 1 pinch sugar
  • 0.7 oz pecorino (grated)

  • 1 Pot
  • 1 Colander
  • 1 Ladle
  • 1 Knife

Steps

  • Take a saucepan and put inside the finely chopped onion, chopped sun-dried tomatoes, a drizzle of extra virgin olive oil, a bay leaf, and the eggplant cut into cubes.

    Sauté these ingredients together and when golden, add the tomato pulp or passata, fine salt, a pinch of sugar, and then start cooking.

  • The sauce should cook gently for about 45 minutes.

    When the sauce is almost ready, I cooked the gnocchi, drained, and plated them. Choose the pasta shape you like best.

    Don’t forget a nice grating of pecorino to finish the dish.
