  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

Let’s see the ingredients needed to prepare the recipe

  • 3 eggs
  • 350 g chard (frozen)
  • 4 potatoes (medium-large)
  • 180 g bell peppers (weight cleaned and sliced)
  • 10 Taggiasca olives
  • 1 clove garlic
  • to taste extra virgin olive oil
  • 30 g provolone (grated)
  • 2 tablespoons milk
  • to taste fine salt

Tools

  • 1 Baking dish
  • 1 Pan
  • 1 Fork
  • 1 Knife
  • 1 Mixing bowl

Steps

  • First, I cooked the vegetables. I cooked both the chard and the potatoes in the microwave for 12 minutes. If you don’t have or don’t want to use the microwave, boil the potatoes and chard in a pot of water.

For the microwave procedure, I simply took the frozen chard and placed it in a mixing bowl, cooking it as is for 8 minutes. Once done, I set it aside.

Then I cooked the potatoes, washing them well and wrapping them with their skin in damp parchment paper and cooking them for 12 minutes on the microwave plate. Once ready, I peeled them and set them aside.

In a pan, I cooked the bell peppers, which had been washed and sliced, along with the Taggiasca olives, salt, and garlic (without the germ) for about 10 minutes.

A few minutes before the end of the cooking time for the bell peppers, I added the previously cooked and well-drained chard. I added flavor and then added the potatoes.

  • Once the vegetables were ready, in a mixing bowl, I beat 3 eggs with the grated provolone, milk, and a little more salt.

I combined the eggs with the vegetables and poured the mixture into a pan or pre-greased oven mold base. I use pans because mine can go from induction stovetop to oven.

Bake the omelette in a preheated convection oven at 338°F for about 25 minutes.

Our dish will be ready when it is golden and firm.

Hello, I'm Simona, and my page is called BriCciola in cucina, because I dedicated it to my mom and dad, who have called me that since I was little. I'm not a chef, and in my life, I've always dealt with completely different things, but cooking, along with dancing, has always been one of my great passions. However, my greatest inspiration came from the dishes prepared first by my grandmother and now by my mom. Here on my cooking blog, I'll guide you from appetizers to desserts, with recipes designed for a healthy and mindful lifestyle. Balanced dishes, carefully chosen ingredients, and lots of flavors, because eating well never means giving up pleasure. I love eating, but I also like taking care of my health, my family's health, and, in a way, the health of everyone who tries my recipes. That's why daily life should be rich in flavor, but always with a focus on healthy eating. Thank you, I look forward to seeing you.
