Peanut and Chocolate Cookies

They are low in sugar, but the chocolate chips inside make up for the sweetness and indulgence. As I always say, if you want more sugar, you can always add it to your taste.

Ingredients

Let’s see the ingredients we need for this recipe

  • 3.5 tbsp vegetable oil
  • as needed chocolate chips (8 per cookie (I used 4))
  • 3/4 cup peanuts (to be ground into flour)
  • 1/3 cup flaxseeds
  • 1/4 cup sugar (I used 2 tbsp)
  • 1 1/4 cup semolina flour (or other flour type 0, type 1, type 2)
  • 1 egg
  • 1 pinch fine salt
  • 1 tbsp liqueur (use one for desserts or any other you prefer)
  • 1 tsp baking powder
  • 1 packet vanillin

Tools

You will need a container to mix the ingredients, a fork, a scale, and a blender or food processor to grind the peanuts.

Steps

  • In a container, put the egg, sugar, a pinch of salt, and use a fork to start mixing.

    Then add the vegetable oil and the tablespoon of liqueur of your choice and continue mixing.

    Now take the nuts, shelled and unsalted peanuts, and together with the flaxseeds, place them in the blender. Start grinding until you get a peanut and seed flour.

    Now incorporate the powders into the liquids. In the container where we were mixing the liquids, start adding both the flour of your choice and the peanut flour, along with the baking powder and vanillin.

    If the mixture is no longer workable with a fork, start kneading with your hands. You will get a dough ball that you will let rest in the fridge, so after about 20-30 minutes of resting in the cool, it will be easier to work with and shape.

  • Take the dough ball and remove pieces of dough that, for convenience, I always weigh so I’ll have more or less uniform cookies.

    Once you have your piece of dough in your hands, flatten it to make space in the center for the chocolate chips. I used 4 per cookie, but you can use 8-10 if you like. I always prefer a bit less sweetness.

    So, insert the chips in the center and close the dough you have in your hands, rolling it into a ball.

    Place the ready balls on a baking sheet lined with parchment paper.

    Preheat the oven, and once it reaches 356°F fan oven, bake for about 13 minutes. Based on your oven’s power, it may take a few less or a few more minutes.

  • The cookies are ready to be enjoyed. You can eat them as a snack, after a meal, or in the morning for breakfast.
