Creamy pasta and beans or bean soup is one of the heartwarming main courses that I’ve always loved.

My grandmother from Campania, and now also my mother, taught me to prepare it this way, as I will shortly show you in the recipe.

Ingredients

Let’s see the ingredients we need to make this recipe

  • 10 1/2 oz dried cannellini beans
  • 6 leaves celery
  • 1 carrot
  • Half onion
  • Half leaf bay leaf
  • 7 tomatoes (Piccadilly type)
  • to taste fine salt
  • to taste extra virgin olive oil
  • Half teaspoon baking soda
  • to taste pasta
  • to taste parsley
  • 5 leaves basil
  • 2 pinches garlic

Steps

  • The evening before preparation, take the dried cannellini beans, soak them in water to cover and add half a teaspoon of baking soda.

    The next morning after at least 12 hours of rest, take the beans, rinse them from the water and peel them. This is the step a little more laborious, but believe me, it will be worth it.

    Once you have peeled all the beans, from their skin, place them in a pot, where you have previously added water. The amount of water should reach halfway up the pot.

    At this point start seasoning the beans that you have placed in the pot with the water.

    Add the olive oil, salt, chopped celery leaves, carrot, parsley, and onion, basil leaves, and garlic. Also, add the chopped tomatoes.

    Start cooking the soup, you will see that gradually the beans and liquids will turn into creaminess.

    Now take the pasta, like tubetti or another type you prefer, I usually use broken spaghetti, increase the heat under the pot and as soon as it boils, throw it in and cook for the required time.

    When the pasta is ready, the creaminess and goodness of this dish will reward you with deliciousness.
