Crumbly Cookies

The crumbly cookies are very simple shortbread cookies that are quickly prepared without the use of too many utensils.

They are characterized by an oil-based dough that I have flavored with lemon zest and juice, but you can also choose orange, vanilla, cinnamon, whatever you like. The dough will always be the same, only the aroma will vary.

Ingredients

Let’s see the ingredients we need to make the cookies

  • 2 eggs
  • 1 pinch fine salt
  • 1.5 oz potato starch
  • 2.5 cups type 1 flour
  • 1/3 cup sugar
  • Half lemon (juiced and zested)
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil

Tools

No special tools required, just a bowl to mix, a fork, and your hands.

Steps

  • In a bowl, start to mix the sugar with the citrus zest of your choice. Then add the eggs, the pinch of salt, the oil, and the juiced half lemon.

    Mix the ingredients well with a fork and then add the baking powder and sifted flour. If it becomes difficult to mix with the fork, set it aside and continue with your hands until you get a smooth and compact dough.

    If you have time, place the dough in the fridge for half an hour, wrapping it in plastic wrap or covering the bowl where you mixed.

    If you’re in a hurry, you can skip this step.

  • LET’S SHAPE AND BAKE

    Take the dough and break off pieces considering the size you want for the cookie. I usually keep the scale nearby and weigh each piece to have cookies more or less the same size.

    As you can see from the photo, I simply rolled the dough between my hands to create balls. Where I added jam, I made a hole in the center with my finger, which I then filled with my preferred jam.

    I placed the cookies on parchment paper and once the oven was preheated, I baked at 350°F fan, for about 20 minutes.

Tips

Crumbly cookies can be stored for several days in a glass jar or tin box. With these doses, you will get about 20/23 cookies. It depends on the size you give them.
