The buckwheat and bitter orange muffins are soft treats where the citrus marmalade takes center stage.
THESE MUFFINS do not contain sugar in the batter, because through experimentation, I found that bananas, chocolate chips, and marmalade perfectly compensate for this omission.

Ingredients
Let’s see what ingredients we need to make the buckwheat and bitter orange muffins
- 1 tsp baking powder
- 1 tsp orange marmalade (for each muffin)
- 1 egg
- 2 tbsps vegetable oil
- 2/3 cup milk
- 1 1/4 cups buckwheat flour
- 2 bananas (ripe and soft)
- to taste chocolate chips
- 1 tsp liqueur
- 1 pinch fine salt

You will need a bowl, a fork to mix, and a muffin tin.
Steps
In a bowl, place two ripe bananas and mash them well with a fork to make a puree. Then add the egg, the oil, a pinch of salt, the milk, and the generous teaspoon of your preferred liqueur. I chose a hazelnut liqueur.
Mix the ingredients well and add the sifted baking powder, and finally the buckwheat flour.
Mix well until you achieve a smooth and homogeneous batter, as you can see in the photo below.
Now that the batter is ready, let’s prepare the muffin tin. For convenience and personal preference, I almost always use paper liners when making muffins.
➡️I use this system to avoid greasing and flouring the tin because these paper liners make the treats more cheerful and colorful. Again, it’s my preference, you can grease and flour the tins or choose the liners.
Once you’ve poured a tablespoon or two of batter into each tin, add a nice teaspoon of marmalade and a few chocolate chips to seal it. Add as many chips as you like.
Now we’re ready to bake. Preheat the oven to 180°C (356°F) and once it’s at temperature, bake for about 18 minutes.
The muffins will stay nice and soft. Always check the inside with a skewer before removing them from the oven.
