Here are the ingredients to prepare the recipe
- 2 oz grated Parmesan cheese
- 1 1/4 cups milk
- 1 1/4 cups flour
- 2 tbsps extra virgin olive oil
- to taste fine salt
Steps
In a bowl, start adding the Parmesan, milk, oil, salt, and flour.
Using a fork or a whisk, mix all the ingredients well, trying to avoid lumps.
The mixture should be more liquid than solid.
Take a pan, I use those with a stone bottom, but non-stick pans are also fine.
Pour a small amount of oil, and with a brush or absorbent paper, coat the cooking surface, which should be greasy but not too oily.
I poured two or three tablespoons of batter for each crepe. I spread them out, trying to give them the classic shape, but as thin as possible. Of course, everyone can prepare them to their taste for thickness.
Cook over medium heat for 3/4 minutes on each side. When you see that the batter has set, flip it and finish cooking.
The crepes are ready to be enjoyed.
