The lemon rice cookies are incredibly easy to make, very fragrant, and suitable for everyone, especially for those who are gluten intolerant. Made 100% with rice flour.

They are crumbly cookies that contain lemon juice and zest, so citrus lovers, step forward.

Perfect from breakfast to snack time, but they pair wonderfully with tea and herbal teas.

Ingredients

  • 1 egg
  • 1.76 oz lemon juice (+ zest of one lemon)
  • 2.82 tbsp sugar
  • 3.52 tbsp vegetable oil
  • 2 cups rice flour

Steps

  • In a mixing bowl, break the egg, add the sugar and a pinch of salt. Start mixing with a fork.

    Squeeze a lemon to get the required amount of juice, and strain it through a strainer to remove any seeds.

    Add the juice and the grated zest and continue mixing. Add the oil and gradually incorporate the flour.

    Mix with the fork as long as possible, then proceed with your hands.

    Once you have a smooth and fragrant dough, place it on a pastry board and use a rolling pin to roll out a not-too-thin sheet.

    This is because the cookies do not contain baking powder, and if rolled too thin, they won’t have the same texture and taste as when left thicker.

  • I cut out the cookies with a flower-shaped cutter and then, with the tip of a pastry bag, I created the decoration you see.

    Everyone is free to cut out the cookies in the shapes they prefer.

    Once the cookies are ready, place them on a baking sheet lined with parchment paper or a silicone mat. Depending on the size, you will get about 20 cookies.

    Preheat the oven to 338°F (static), and once at temperature, bake and cook for about 18 minutes.

Tips for Lemon Cookies

I made the lemon rice cookies without using baking powder, but if you like, you can add 1 tsp of vanilla baking powder to make them rise more.
