Cookies with Pine Nuts and Chocolate

Cookies with pine nuts and chocolate are delicious little balls, easy to make, characterized by an oil-based dough, rice flour, and type 1 flour.

I am a lover of less refined flours and indeed, I almost always use these types, but know that you can easily replace them with all-purpose or cake flour.

Ingredients

  • 2 eggs
  • sugar (60g (about 1/3 cup))
  • 1 pinch fine salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract (or powdered vanilla)
  • A few drops lemon juice
  • vegetable oil (80g (about 1/3 cup))
  • type 1 flour (280g (about 2 1/4 cups))
  • rice flour (70g (about 1/2 cup))
  • as needed chocolate chips (for decoration I used mini chocolate chips)
  • as needed pine nuts (for decoration)

Steps

Let’s see the main steps

  • In a container add the eggs and with a hand whisk or fork, beat them together with the sugar. Add the pinch of salt, oil, a few drops of lemon, vanilla, and mix all the ingredients well.

    Now incorporate also the two types of flour and the sifted baking powder. As I mentioned in the introduction, if you don’t like or are not used to using type 1 flour, replace it with all-purpose. If you use all-purpose, compared to type 1, you might need a few extra grams in the preparation. If while assembling the dough it seems a bit sticky, add a little more flour. I always adjust based on how the dough feels.

    Once the dough is made, let it rest in the fridge for about thirty minutes. If you’re in a hurry, you can also skip the fridge step.

  • Take the dough from the resting time and breaking off pieces, about the size of a walnut, roll them between your hands to form simple balls. On the surface, add chocolate chips and pine nuts in your desired amount.

    For me, toasted pine nuts are irresistible.

    Bake at 355°F (180°C), in a preheated ventilated oven, for about 15 minutes. The perfect time always depends on your oven.

Preservation of Cookies with Pine Nuts

The cookies keep for a few days, in a tin or airtight glass jar.
