Lemon and Vanilla Ring Cake

The lemon and vanilla ring cake is a simple little cake that I love very much. I adore this blend of essences that, mixing together, give this little cake a delicate yet decisive taste, a taste suitable for citrus lovers.

It is the classic ring cake suitable for both adults and children. Lightly sweetened, without butter, but soft and spongy. What do you say, shall we prepare it together?

Ingredients

Let’s see the ingredients needed to prepare this recipe

  • 2 eggs
  • sugar (1/4 cup)
  • lemon zest (organic, edible peel)
  • lemon juice (1/4 cup)
  • water (2 1/2 tablespoons, warm)
  • vegetable oil (1/4 cup)
  • 1 teaspoon vanilla extract
  • 1/2 packet baking powder
  • all-purpose flour (1 1/8 cup)

Tools

No special tools are needed to make the lemon and vanilla ring cake

Steps

Let’s see the steps to make it

  • In a bowl, beat the eggs with the sugar, add the oil, warm water, lemon juice, grated zest, and vanilla teaspoon.

Once these ingredients are well combined, start incorporating the sifted flour and baking powder.

  • The mixture will be smooth and frothy which you will pour into a mold lined with parchment paper or greased and floured.

As you have seen from the quantities, this ring cake is for 4/6 portions, so the mold should not be too large. I used a silicone one with a diameter of 7 inches.

  • Pour the mixture into the chosen mold and bake at 338°F preheated static oven for about 35 minutes. Always do the toothpick test and adjust based on your oven.

Once taken out of the oven, I had fun decorating it with papaya peels. You can leave it simple or add powdered sugar on top.

    Happy Baking

Storage

The cake can be stored under a glass dome or in an airtight container for 2/3 days.

If my sugar amounts seem low to you, you can add an extra 2/3 tablespoons. I prefer not too sweet desserts, especially if they are well-flavored.

Hello, I'm Simona, and my page is called BriCciola in cucina, because I dedicated it to my mom and dad, who have called me that since I was little. I'm not a chef, and in my life, I've always dealt with completely different things, but cooking, along with dancing, has always been one of my great passions. However, my greatest inspiration came from the dishes prepared first by my grandmother and now by my mom. Here on my cooking blog, I'll guide you from appetizers to desserts, with recipes designed for a healthy and mindful lifestyle. Balanced dishes, carefully chosen ingredients, and lots of flavors, because eating well never means giving up pleasure. I love eating, but I also like taking care of my health, my family's health, and, in a way, the health of everyone who tries my recipes. That's why daily life should be rich in flavor, but always with a focus on healthy eating. Thank you, I look forward to seeing you.
