Gnocchi with cauliflower cream is a super tasty first course but also rich in beneficial properties. You know that I love and always try to combine taste and food awareness.

Today for my first course I used the magnificent potato gnocchi from the company Patarò gnocchi.

Ingredients

You will need very few ingredients to prepare this recipe

  • potato gnocchi (1.3 lbs)
  • cauliflower (1.76 lbs)
  • ricotta (4.2 oz)
  • grated Parmesan cheese (1.8 oz)
  • 4 tablespoons milk
  • to taste provolone

Tools

A blender will be needed to prepare the cauliflower cream

Steps

  • Take the cauliflower, wash and boil it in salted water for about 15-20 minutes. Once ready put the florets in your blender pitcher, adding also the ricotta, the grated Parmesan and the milk. Taste the cream and adjust the salt if necessary.

  • Blend the ingredients until you obtain a smooth and creamy texture. If too thick, adjust by adding a little more milk.

    Take your potato gnocchi and boil them.

  • My gnocchi cooked for 2 minutes and they were ready. Cook according to yours. I dipped them in the wonderful cauliflower cream and plated them by adding provolone shavings on top. All that’s left is to wish you bon appétit.

Tips

You can also use the cauliflower cream to dress other types of pasta; even dry pasta (penne, mezze maniche, fusilli) will be perfect.
