- radicchio (1.3 lbs)
- to taste extra virgin olive oil
- 2 cloves garlic
- 2 grams fine salt
- to taste Taggiasca olives (or green)

This recipe is very simple to make, and I love it because, besides being a side dish, I can also use it as a pasta sauce.
The process is practically the same, I decide whether to use it as a side dish or as a main dish.
First, take the radicchio and wash it thoroughly. Then cut the leaves into pieces and transfer them to your saucepan.
Add water, extra virgin olive oil, salt, garlic, and Taggiasca or green olives, all together without sautéing first. The vegetable will cook in its own released water. I usually let it go for about 15/20 minutes and it’s done.
What makes the dish appetizing in its simplicity are the olives and garlic. I love it.
After 15 minutes, taste and check the seasoning and whether the vegetables are cooked to your liking. If necessary, cook a little more or less.
You can use the preparation however you like, with meat, bread croutons, or as I said, with pasta.

If you don’t use all the appetizing braised radicchio, you can store it in the fridge for up to two days.
When ready to eat it again, just reheat it in a pan and it will be as good as freshly made.
