Ingredients for Light Tuna Sauce without Eggs
- 5.6 canned tuna in water (or drained oil-packed tuna)
- 3/4 cup g 0% fat Greek yogurt (or robiola or Philadelphia)
- 0.9 oz salted capers
- 4 fillets anchovies in oil (or salted)
- 2 tablespoons extra virgin olive oil (optional)
Tools
- 1 Immersion Blender
- 1 Strainer
Steps
Desalt the capers under cold running water, using a fine mesh strainer.
If using salted anchovies, desalt them well by opening them, removing the bones, and rinsing several times.
Drain the tuna very well; I recommend using good quality jarred tuna so the fillets are visible and whole.
Finally, place the tuna, capers, and anchovies into the blender cup and blend for a few seconds.
Add half of the Greek yogurt and 1 tablespoon of extra virgin olive oil, then blend again for a few seconds.
Incorporate the remaining yogurt by stirring with a spoon to mix everything, taste for seasoning and only if necessary adjust with salt.
Place the Egg-Free Tuna Sauce without Mayonnaise in a bowl, drizzle with a bit of oil, and garnish with an anchovy fillet.
Storage, Tips, and Variations for Light Tuna Sauce without Eggs
The tuna sauce can be stored in the refrigerator in a glass jar for 4 or 5 days.
You can use either oil-packed or water-packed tuna to make it lighter.
Either salted capers or those in oil or vinegar work well, always well rinsed.
Instead of Greek yogurt, you can use robiola or Philadelphia.
