First, wash and slice the eggplants.
Arrange them on previously greased parchment paper. I bake them like this, they will be perfect as grilled, but you won’t have to keep turning them, with the risk of burning them if you get distracted.
About 20 minutes in a convection oven at 356°F and they will be ready. Once cooked and soft, set them aside
Now let’s prepare the sauce, as we like it. A simple sauce made with garlic, onion, and a carrot mince will be just fine. Cook for about 20 minutes. Once ready, set it aside.
Also, boil the eggs until hard.
Take a baking dish and start by spreading a layer of sauce on the bottom. Now begin with a layer of eggplants, then mozzarella, sliced hard-boiled eggs, and grated Parmesan. Continue this way until all ingredients are used. Sprinkle some more cheese on top to create a delicious golden crust and put in a convection oven at 356°F for about 30 minutes.
