Orange Ball Cookies

My orange ball cookies with a surprise inside are delightful to bite into, despite being simple to make.

The orange balls are prepared with an oil-based pastry scented with orange zest.

Oil-based pastries are among my favorites. I find them light and wholesome.

Ingredients

  • rice flour (6 oz)
  • spelt flour (7 1/2 oz you can also use all-purpose flour)
  • sugar (3 oz you can go up to 3 1/2 oz)
  • 2 eggs
  • seed oil (1/2 cup)
  • 1 orange zest (of a whole orange)
  • 1 teaspoon vanilla essence
  • 2 teaspoons baking powder
  • 1 pinch fine salt
  • as needed chocolates

Steps

  • Using a fork or a whisk, whip together sugar and eggs, TIP (I used a hand blender to turn cane sugar into powdered sugar).

    Add the oil, a pinch of salt, the grated orange zest, vanilla extract, and the flour gradually.

    At this point, also add the sifted vanilla baking powder.

    Knead with your hands until you form a dough ball, and once it is nice and smooth, place it in the fridge to rest for half an hour.

  • Take the dough and tear off pieces to shape the cookies.

    Once you have a piece of dough in your hands, spread it to place a chocolate inside. I used round ones with a white milk heart to make them more appealing when cut.

    Once the chocolate is placed in the center of the dough, close it by bringing all the edges together to form a round cookie ball.

    Make sure no chocolate is visible. This way, it won’t leak out during baking.

  • Bake at 340°F for about 15 minutes. Check according to your oven, and remove the orange balls when done.

Tips for storing orange ball cookies

Orange ball cookies will stay good and crumbly for 3-4 days if stored in a tin box or a glass jar.
