Ingredients
Let’s see what we need to prepare the cookies.
- sugar (120g)
- 2 teaspoons vanilla extract (liquid in tube or vanillin)
- 2 teaspoons liqueur (any kind you prefer for desserts)
- to taste unsweetened cocoa powder
- 3 eggs
- seed oil (110g)
- Half lemon zest (grated)
- rice flour (190g)
- all-purpose flour (330g)
- 2 teaspoons baking powder (heaping)
- 1 pinch fine salt
Steps
Take a bowl and use a fork or whisk to beat sugar and eggs until foamy.
Tip n.1: if you use powdered sugar, the texture will be even smoother.
I used cane sugar which I powdered using an immersion blender.
Add oil, a pinch of salt, lemon zest, vanilla extract, and liqueur to the beaten eggs. Mix well.
Now pour in the flour and baking powder, sifted together. Knead by hand to form a dough. Let it rest for half an hour in the fridge.
Tip n.2 As you can see from the image, I did not use cookie cutters to make these cookies.
I made balls by hand and then used a plastic cap to create the indentation to hold the “bun” ball.
The bun ball I left some as they are, like the rest of the cookie, and in others, I simply took a bit of dough and coated it in cocoa powder.
Bake at 340°F for about 15 minutes in a fan oven. Adjust baking time according to your oven.

These cookies can be stored in a tin or glass cookie jar for up to 4 days without any issues, preserving their flavor.
