Ingredients
Let me tell you right away the ingredients used to prepare BREAD AND EGGS.
- eggs (4 or more/less depending on the number of people)
- bread (sliced, I used 4 slices)
- to taste mixed seeds (if you like them)
- to taste extra virgin olive oil
- 10 slices cheese (I chose provolone, but you can use any cheese you like)
- to taste fine salt

No special tools will be needed, just a pan and a spatula to take our bread and eggs preparation and place it on the serving plate.
Steps
Let’s see the very simple and quick steps to make this delicious lunch or dinner.
The first thing to do is take a non-stick pan, lightly grease it, and heat it up. Meanwhile, slice the bread according to the number of people. I make two or three slices per person. Then, we drizzle it with olive oil, like a bruschetta, and place it in the hot pan. Now take the eggs and as soon as the bread is golden on both sides, pour the eggs over it with a pinch of salt.
After a few minutes, place the cheese slices, which can be provolone, asiago, fontina, basically any melting cheese, over the eggs and bread. Finally, add the seeds. As you can see from the image, everything will blend together. Cook according to your preference.
I left the yolk less firm to enjoy dipping in it. It’s up to you. The delight comes from this slightly greasy crispy bread, which will pair wonderfully with the eggs and melted cheese. If you like seeds, you’ll see that they will also contribute to the tasty and appetizing outcome of the dish.
