Ingredients

Let’s see the ingredients to prepare the zucchini meatballs.

  • zucchini (1.43 lbs)
  • 1 egg
  • 3 potatoes
  • to taste grated Parmesan
  • Half onion
  • to taste garlic powder
  • to taste parsley
  • 3 tablespoons milk
  • 3 slices bread
  • tablespoons breadcrumbs (1 or 2)
  • to taste chia seeds (optional, you can also use other seeds or nothing, just breadcrumbs)

Tools

No particular tools needed. A bowl to mix the dough, a fork, a baking sheet to place the zucchini meatballs.

Steps

Let’s now see the simple steps to make our zucchini meatballs.

  • In a bowl, mash the zucchinis and potatoes that you have previously cooked and drained well from the water.

    Add also the egg and all the flavors, garlic, onion, parsley, salt, and Parmesan. Now add the bread squeezed from the milk and a tablespoon of breadcrumbs.

    Mix and form the small meatballs. If the dough seems too sticky to your hands, add a little more breadcrumbs. Now pass them in the chia seed, breadcrumbs, and salt mix and place on previously greased parchment paper and off to cooking.

  • Bake at 356 degrees Fahrenheit preheated, fan oven mode for about 20 minutes.

    Take out and enjoy this delight.
