Hello friends, welcome back. Today I’m sharing another idea for a SAVORY PIE WITH PESTO. Yes, even though Genoese pesto should never be cooked, I decided to include it in this pie because when I make “lasagne al pesto,” I also bake it in the oven. Ingredients
Let’s see the ingredients needed to prepare our Savory Pie with Pesto
- puff pastry (1 puff pastry but I made my own simple dough, I'll leave the link to the recipe here)
- zucchini (14 oz)
- onions (2)
- to taste fine salt
- to taste extra virgin olive oil
- 4 teaspoons Genoese pesto
- Gruyere (1.75 oz cut into cubes)
- to taste grated Parmesan (Parmesan or Pecorino if you prefer)
Steps
Let’s see the simple steps to make our savory pie with pesto.
Sauté the zucchini and onions in a pan with oil and salt. Once cooked, set them aside. I didn’t use parsley or anything else for flavoring because the pesto did it all.

Below, I’ve included some photos of the process. Flour and salt in the center, oil and water, and the dough is ready. For this preparation, I used a wonderful quality flour from Molino Squillario. Roll out the dough, make a layer of grated Parmesan, place the zucchini with onions on top, then add dollops of pesto here and there, and finally, cubes of Gruyere and another sprinkle of Parmesan.
Fold the dough and bake in a fan oven at 356°F for 25/30 minutes and check.
