Ingredients

  • 2 cups whole wheat flour (or any flour you prefer, one, zero, spelt)
  • 3 tbsp brown sugar
  • 1 pinch salt
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 pinch nutmeg
  • 1/4 cup extra virgin olive oil (or seed oil if you prefer)
  • 1/3 cup milk (or plant-based milk)

Steps

    In a bowl mix flour, sugar, baking powder, salt, and all the spices.

    Pour the EVO oil and milk into the center of the dry ingredients and mix with a fork then knead with your hands.

    If the dough is too dry, add 1 tablespoon of water or milk at a time.

    It should be soft but not sticky.

  • Wrap the dough in plastic wrap and let it rest in the fridge for 15-20 minutes.
    (It helps compact the oil shortcrust pastry.)

    If you’re really in a hurry and can’t follow this step you can skip it.

    Roll out the dough on a work surface to a thickness of 3/16 inch and cut out the cookies.

    Or make balls and flatten them with your palm.

    Place on a baking sheet lined with parchment paper or, as I did, a silicone mat.

    Bake at 350°F for 12-14 minutes, until the edges start to turn golden.

    Let them cool: they harden a bit and become crunchy.

How to store Spiced Christmas Cookies

Before storing the Spiced Christmas Cookies, they must be completely cool: if stored while still warm, they create moisture and become soft.

Airtight containers (glass or tin): ideal for crispy cookies.

Tin boxes with parchment paper sheets inside: great for keeping them dry.

Crispy cookies → keep them separate from soft ones, otherwise, they lose consistency.

If the cookies have icing or chocolate → place parchment paper between the layers.
