Gorgonzola Sauce with Taggiasca Olive Paté and Toasted Bread Crumbs

Dear friends, today I’m sharing a recipe that will make your mouth water. My goodness, how scrumptious this sauce is. You can use it with any pasta you prefer, whether dry or fresh, and you’re sure to get a tasty result. This dish is dedicated to the Ligurian oil mill I frequent, which deserves all the greatest compliments. Thanks to their wonderful Ligurian Taggiasca olive paté, this delicious and appetizing first course was born. And who doesn’t love gorgonzola? I could eat it even for breakfast. Everyone has their own tastes, but if you love these few ingredients I’ve mentioned, you must try to make this dish. I’m heading to the kitchen, see you there.

Ingredients

Let’s see what we need to prepare our tasty sauce.

  • gorgonzola (3.5 oz)
  • 3 teaspoons olive paté
  • to taste milk
  • bread (crispy bread crumbs to garnish the dish)
  • to taste pasta

Steps

Let’s see how to prepare this simple condiment

  • Take the gorgonzola, cut it into pieces, and put it in a bowl. Add some warm milk to the cheese and mix well until it becomes creamy. I placed the bowl in the microwave for a few minutes to melt the cheese better. If you don’t have a microwave, transfer the mixture to a skillet and heat it a little there.

  • When the cheese and milk become creamy, take the olive paté and add two or three teaspoons depending on your taste and the pasta you need to season. I added three generous teaspoons. This amount covers the sauce for 2/3 servings.

  • Now cook the pasta you like most, and once ready, drain it directly into the bowl or skillet (if you used it to warm the sauce). Mix the sauce well with the pasta. After stirring, I put the bowl back in the microwave for two minutes.

  • I plated the dish and added a little more paté on top and some toasted bread crumbs in the skillet. Ready, set, gooooo, everyone to the table, it’s time to eat! Enjoy your meal
