Ingredients
Let’s see what we need to prepare the simple sparkling water cake
- 2/3 cup 0% fat Greek yogurt (or plain low-fat)
- 1/4 cup whole cane sugar (or fine white sugar)
- 1 lemon zest (grated)
- A few drops vanilla essence
- 1 pinch fine salt
- 1/2 cup vegetable oil
- 3/4 cup sparkling water
- 1 packet baking powder
- 2 cups type 1 flour (or other type of flour)
- to taste pine nuts (for the final topping)
- to taste sliced almonds (for the final topping)

Let’s Prepare the Batter
In a bowl, mix together the yogurt and the sugar.
Once they are nice and frothy, add the oil, salt (a pinch), vanilla essence, and lemon zest.
Now add a first portion of flour while stirring constantly.
When the batter starts to thicken, add the sparkling water.
Then add the remaining flour and the sifted packet of baking powder.
Everything is ready to be poured into the mold previously buttered and floured.
Now all that’s left is to bake the cake.
Oven static mode, preheated to 340°F for about 30/35 minutes.
Before turning off the oven, always do the toothpick test.

How to store the sparkling water cake
This simple dessert keeps at room temperature for two days under a glass cake dome.
