Ingredients
Let’s see what ingredients are needed to prepare the semolina and jam cookies
- 2 3/4 cups semolina flour
- 1/2 cup potato starch
- 3 tbsp sugar (you can add up to 5 tbsp for sweeter cookies)
- 6 tbsp vegetable oil
- 3/4 cup milk
- 2 teaspoons baking powder
- lemon zest (juice of half a lemon + grated zest)
- 1 packet vanillin
- 1 pinch fine salt

You will need a round cookie cutter or if you don’t have one, you can cut them with a glass

- 1 Rolling pin
- 1 Work surface
- 1 Teaspoon
- 1 Lemon grater
- 1 Cutter round cookie cutter
Steps
In a bowl, start grating the lemon zest and with the help of a fork, mix it with the sugar.
Now add the oil, the milk, the pinch of salt, the packet of vanillin, and the juice of the squeezed half lemon.
Keep stirring and mixing the liquids, when the mixture is smooth, start incorporating the flour, starch, and baking powder.
When it’s no longer possible to mix with the fork, continue kneading with your hands until you get a soft but compact dough.
After rolling out the dough with a rolling pin, start creating the cookie discs using a round cutter or a glass.
If you leave them thicker, they’ll be even more delicious. Once cut, place them on a baking sheet covered with parchment paper.
Turn on the oven in ventilated mode, 356°F and once at temperature, bake for about 13 minutes. Always adjust according to your oven’s power.
Once baked, remove them and let them cool a bit, then you can start filling them with jam.
A sprinkle of powdered sugar, if you like, and your cookies are ready to be enjoyed.
