Ingredients
- 1/4 cup sugar
- 2 cups semolina flour
- 2 tbsp lemon juice (+ grated zest)
- 1 pinch fine salt
- 1 egg
- 3 tbsp extra virgin olive oil (or any other oil if you prefer)
- 3 tbsp raisins
- 1 tsp baking powder
- as needed water (to soak the raisins)

Steps
In the mixing bowl, start by adding the sifted flour and baking powder and mix them with a fork.
Add the egg, sugar, oil, a pinch of salt, the zest, and the filtered lemon juice to the center of the dry ingredients.
Before adding the raisins, soak them in a little warm water to rehydrate.
Once softened, squeeze them and add to the mixture.
Mix the liquids with the dry ingredients using a fork as much as possible.
When the dough starts to come together, knead it by hand.
You will get a nice soft and compact dough.
Break off small pieces of dough and roll them between your hands to form cookie balls.
Place the cookies on a baking sheet lined with compostable parchment paper or a silicone mat.
