All Vanilla Bundt Cake

When I thought about making the all vanilla bundt cake, I wanted something that would remind me of sweetness, childhood, candy scents, you know those shops where the smell of vanilla dominates? So, I wanted a simple bundt cake, without too many frills, chocolate, jam, or anything else, I wanted the quintessential homemade cake, imperfect, without powdered sugar to embellish it, just as you see it in the image below. A bit irregular and plain looking, but with an authentic and genuine taste.

Ingredients

Here are the ingredients you will need to prepare the all vanilla bundt cake

  • 3 eggs (whole)
  • brown sugar (80 g if you prefer white, it's fine too)
  • spelt flour (170 g all-purpose or pastry flour are fine too)
  • potato starch (50 g)
  • corn oil (80 g sunflower oil is also fine if you prefer)
  • milk (about 3 tbsp)
  • Greek yogurt (vanilla 170 g)
  • 1 teaspoon vanilla extract (a teaspoon)
  • 1 packet baking powder (16 g vanilla-flavored for desserts)

To make the all vanilla bundt cake you will need a bowl, whisk, 9-inch mold, teaspoons, scale, fork.

Steps

Now let’s see the procedure to make the all vanilla bundt cake.

  • In your bowl (by the way, if you prefer, you can also use a mixer or stand mixer). As we were saying, take the container and start whisking the eggs with the sugar until fluffy. Once fluffy, start adding in sequence, the yogurt, milk, oil, and gradually the flour, potato starch, and finally the packet of baking powder. At this point, also add the teaspoon of vanilla essence. (I buy the one in the Paneangeli tube, not the small vial, just to be clear). If you don’t have it, you can use the vial. Now start preheating the oven, 350°F in static mode. I baked for about 40 minutes, turned it off, only after a dry toothpick test. Everyone knows their oven’s power.

    Take out and enjoy the all vanilla bundt cake, fragrant, light, and so genuine.
