Romanesco Broccoli and Beans

Today I want to propose this very versatile dish to you, Romanesco Broccoli and Beans. You can eat the Romanesco broccoli and beans as a side dish or as a main course. Lots of good cruciferous vegetables and plant proteins, which will fill your stomach and give you an injection of beneficial properties.

I accompanied this wonderful dish with a turkey crumble and a nice piece of dark bread with extra virgin olive oil. I almost forgot.. during the autumn or winter period, enjoying this dish will be a tonic. Here’s the recipe for you.

Ingredients

  • 1 Romanesco broccoli (But I often used other types of broccoli too)
  • 1 package canned cannellini beans (you can also use dried ones after soaking and cooking)
  • 2 cloves garlic (whole garlic)
  • to taste fine salt
  • to taste extra virgin olive oil
  • 2 cups water

Steps

Let’s start preparing our good dish of Romanesco broccoli and beans. Obviously in the winter period this dish will warm our soul and heart, from the cold that leads us to our homes. To the warm and welcoming environment of our families.

  • Let’s see how to prepare this comfort food, Romanesco broccoli and beans. First of all, wash our broccoli well, put them in the pan, add the garlic and turn on our stove or induction hob.

    When they start sizzling, also add the extra virgin olive oil. Meanwhile, if we use canned beans, drain and rinse them from their preservation liquid. At this point add them to the cruciferous vegetables and cover with water to cook them. If two cups are not enough, adjust as needed. They should cover the contents of the pan. The cooking must be slow to allow the broccoli to melt and blend well with the beans, to form a nice creaminess. After 30/40 minutes, taste and adjust the salt if necessary. At the end of cooking, (optional) prepare some slices of multigrain dark bread, (even white bread is fine) which will accompany and pair divinely with our dish.
