  • First, clean the artichokes well, remove the choke, and cut them in half.

    To prevent the artichokes from turning brown, as you clean them, place them in a bowl containing lemon and cold water.

  • Take the artichokes out of the water and after slicing them very thinly, place them in a pan with a generous amount of EVO oil, pine nuts, olives, garlic, salt, and parsley.

    Brown the artichokes by stirring them for a few minutes with the other ingredients, add a glass of water and continue cooking for about thirty minutes.

    Once cooked, turn off the stove, place the butter on the artichokes (so it melts slowly) and cover the pan.

    In the meantime, cook the pasta and once ready, pour it over your sauce in the pan. Add a sprinkle of chopped parsley and mix all the ingredients well. If it seems a bit dry, add two tablespoons of pasta cooking water or another small piece of butter.

    The secret and delicious ingredient I mentioned in the introduction that made this dish creamy and delicious is precisely butter. Believe me, combined with the artichokes and the rest of the ingredients, it gave an exceptional flavor.
