Ingredients for Puff Pastry and Zucchini Swirls
- 1 roll puff pastry (rectangular)
- 1 zucchini (medium size (about 7 oz))
- 1 teaspoon extra virgin olive oil
- 1 pinch fine salt
- to taste mixed peppercorns (freshly ground and quantity according to your taste)

Preparation of Puff Pastry and Zucchini Swirls
Wash the zucchini, remove the ends, and grate it with a coarse grater. Place the grated zucchini in a bowl, season with salt, pepper, and oil, then mix.
Unroll the puff pastry on the work surface, top with the zucchini making sure to drain it well, distribute it evenly, then roll starting from the long side forming a log, cut it into 20 swirls of equal width (I made them about 0.4 inches wide).
Arrange the swirls on a baking tray lined with parchment paper, preheat the oven to 428°F and when hot, bake them for about 35 minutes or until the swirls are golden brown (baking time may vary from oven to oven, they are not all the same!), once cooked, remove them from the oven and serve, excellent both hot and cold!
