Herb loaf bread with wonderfully fragrant mountain herbs, a gift my daughter brought me back from a trip to Germany. Wonderfully fragrant thanks to cornflowers, pink pepper, chives, and lemon zest, but these are not the only magical ingredients: there are also tomato granules, black cumin, sesame seeds, and bean leaves. Of course, I had to ask Google Translate for help, unfortunately, I don’t speak German, and that’s why I found out what the ingredients for the herb topping were. You can still make it yourself, and it doesn’t have to be identical and perfect like the one bought.

Ingredients
- 1 1/10 cup whole milk
- 2 cups durum wheat flour
- 2 cups all-purpose flour
- 1 egg
- 4 oz olive oil
- 1 tsp honey
- 1 1/2 tsp salt
- 1/2 oz fresh yeast
- 2 tbsps herbs
Tools
- Loaf Pan
- Bowl
- Plastic Wrap
- Rolling Pin
- Work Surface
- Towel
- Knife
Steps
Prepare the starter: In a bowl, I put the warm milk with the crumbled yeast, honey, and two tablespoons of flour. I mix and cover with a towel for 20 minutes. Meanwhile, I combine the herbs with the flours.
Take back the dough and add the egg, the oil, and start adding all the flour. I knead it, move to the work surface, and make some folds.
Put in a bowl and let it rest until it doubles.
Roll out the dough with the rolling pin, not too thin, and roll it up. Put it in the loaf pan.
Cover with plastic wrap and let it rest for 30 minutes.
Preheat the oven to 375°F and bake the herb loaf bread for 30 minutes.
Here it is, ready the super fragrant herb loaf bread.
